- .6 cup raw rissoni, cooked per pack instructions.
- 200 g cherry tomatoes, roughly chopped
- 1 cucumber, roughly chopped
- 0.25 red onion, thinly sliced
- 0.5 cup cup fresh parsley, finely chopped
- 10 pitted Kalamata olives, roughly chopped
- 400 g tinned chickpeas
- 50 g feta
- 0.3 cup greek yoghurt
- 0.5 lemon, juiced
- 0.25 tsp granulated garlic (or 1 crushed clove)
- 1 tbsp crushed pistachio nuts (optional)
