- 2 cup raw pearl couscous
- 150 g halloumi, sliced 0.5cm thick (¼ inch)
- 1 lebanese cucumber, roughly chopped
- 200 g cherry tomatoes, roughly chopped
- 0.5 cup fresh parsley leaves, roughly chopped
- 0.5 cup fresh basil leaves, roughly chopped
- 0.2 red onion, finely sliced
- 0.25 cup extra virgin olive oil
- 0.25 cup lemon juice
- 2 garlic cloves, crushed
