One Pot Satay Chicken Fried Rice

- .5 cup peanut butter
- 200 ml lite coconut milk
- 1 tbsp red curry paste
- 1 tbsp honey
- 1 tsp soy sauce
- 1 tbsp white vinegar
- 2 tbsp extra virgin olive oil
- 500 g chicken stir fry strips
- 700 g stir fry vegetables (fresh or frozen)
- 450 g heat and serve (cooked) brown rice
