Hearty Veg Soup
Serves 8
2 tbsp extra virgin olive oil
2 onions, chopped
3 garlic cloves, crushed
2 carrots, chopped into bite sized pieces
1 1 butternut pumpkin, chopped into bite sized pieces
1 capsicum (bell pepper), chopped into bite sized pieces
2 zucchini, chopped into bite sized pieces
400 g tin chickpeas, drained
800 g tin cherry tomatoes
4 cup salt reduced vegetable stock
1 tbsp balsamic vinegar
.5 cup grated parmesan cheese, to serve
2 tbsp chopped fresh parsley, to serve
.5 tsp chilli flakes to taste(optional)
