One Tray Satay Chicken
Serves 4
2 capsicum (bell pepper), thinly sliced
1 head of broccoli, cut into florets
2 red onion, cut into small wedges
600 g chicken thigh fillets, cut into strips (4 large fillets)
2 tbsp granulated nuts
100 g smooth peanut butter
2 tbsp honey
2 tbsp olive oil
2 tbsp green curry paste
60 ml lime juice, with an extra lime cut into wedges to serve.
450 g heat and serve brown rice
0.5 cup fresh coriander (cilantro), tender leaves and stems
