One Tray Satay Chicken
Serves 4
- 2 capsicum (bell pepper), thinly sliced
- 1 head of broccoli, cut into florets
- 2 red onion, cut into small wedges
- 600 g chicken thigh fillets, cut into strips (4 large fillets)
- 2 tbsp granulated nuts
- 100 g smooth peanut butter
- 2 tbsp honey
- 2 tbsp olive oil
- 2 tbsp green curry paste
- 60 ml lime juice, with an extra lime cut into wedges to serve.
- 450 g heat and serve brown rice
- 0.5 cup fresh coriander (cilantro), tender leaves and stems
