Spanish Veggie One Pot Pasta
Serves 2
1.5 tbsp extra virgin olive oil
1 brown onion, finely chopped
1 capsicum (bell pepper), cut into bite sized pieces
1 zucchini, cut in half lengthwise and then into 1cm half moons
1 tsp smoked paprika
75 g sun dried tomato strips
2 garlic cloves, crushed
400 g tin diced tomatoes
2 cup vegetable stock
1 tbsp honey
200 g penne pasta
0.25 cup fresh parsley leaves
0.25 cup parmesan cheese, grated or shaved
0.5 tsp chilli flakes (optional)
