- 500 g gnocchi
- 300 g jar red peppers, drained and thinly slice
- 100 g Kalamata olives, sliced
- 1 small red onion, thinly sliced
- 800 g tin diced tomatoes
- 2 cup vegetable stock
- 1 tbsp Italian herbs
- 100 g bocconcini
- 0.25 cup fresh basil
