Greek One Tray Chicken
Serves 4
- 2 tbsp garlic infused extra virgin olive oil
- 2 tbsp balsamic vinegar
- 500 g chicken thigh fillets
- 1 cup quinoa
- 350 ml vegetable stock
- 0.5 cup kalamata olives, chopped
- 0.5 cup sun-dried tomato, chopped
- 400 g tin diced tomato
- 0.25 cup slivered almonds
- 100 g feta cheese
- 2 cup baby spinach
- 1 tbsp balsamic glaze to serve (optional)
