500 g chicken mince
1 tbsp garlic infused extra virgin olive oil
100 g vermicelli noodles
350 g kale slaw mix (or coleslaw mix, without the dressing)
0.5 bunch of mint leaves, roughly chopped
1 bunch coriander (cilantro), roughly chopped
1 red onion, finely sliced
1 tbsp sesame oil
0.3 cup soy sauce (or tamari if GF)
1 lime, juiced
0.3 cup sweet chilli sauce
0.25 cup granulated nuts (or crushed peanuts)
1 red chilli (optional)
