Rice Noodle Chicken Salad
Serves 4
- 500 g chicken mince
- 1 tbsp garlic infused extra virgin olive oil
- 100 g vermicelli noodles
- 350 g kale slaw mix (or coleslaw mix, without the dressing)
- 0.5 bunch of mint leaves, roughly chopped
- 1 bunch coriander (cilantro), roughly chopped
- 1 red onion, finely sliced
- 1 tbsp sesame oil
- 0.3 cup soy sauce (or tamari if GF)
- 1 lime, juiced
- 0.3 cup sweet chilli sauce
- 0.25 cup granulated nuts (or crushed peanuts)
- 1 red chilli (optional)
