One Tray Sticky Chicken with Fried Rice

- 500 g steamed brown rice (cooked!)
- 2.5 cup frozen peas, corn and carrot mix
- 0.5 cup kecap manis (sweet soy sauce)
- 2 tbsp fresh ginger (or ginger paste)
- 2 tbsp sriracha
- 500 g chicken thigh fillets
- 0.5 cup spring onion, chopped
- 1 tbsp toasted sesame seeds (optional)
