Crumbed Chicken Salad
Serves 4
.5 cup corn chips, crushed
.25 cup quinoa flakes
2 chicken breast, sliced in half
2 eggs, lightly whisked
2 tbsp extra virgin olive oil
2 cup mixed leaves
.5 red onion, thinly sliced
1 g cucumber, cut in half lengthways and then into 1cm slices.
100 g cherry tomatoes, halved
1 avocado, thinly sliced
1 tbsp lemon juice
4 tbsp garlic aioli
