- .3 cup wholemeal couscous
- 3 tbsp extra virgin olive oil
- 1.5 tbsp white wine vinegar
- 1 tbsp honey
- 200 g satay tofu, (firm, marinated) sliced into squares
- .5 avocado, sliced
- 1 Lebanese cucumber, sliced
- 250 g cherry tomatoes, chopped
- 2 tsp lemon herb and garlic seasoning
- 1 tbsp pumpkin seeds
