Carrot Cake with Cashew Frosting

- 2 free range eggs
- 1 cup Greek yoghurt
- .3 cup rice bran oil
- .3 cup maple syrup
- .5 cup milk
- 2 cup self-raising wholemeal flour
- 1 tsp baking soda
- 1 tbsp cinnamon
- 1 cup walnuts
- 2 cup carrots, grated
- 1 cup raw cashews, soaked for 1-4hrs.
- 1 tbsp lemon juice
- 2 tbsp maple syrup
