- 2 tbsp parsley, finely chopped
- .5 cup panko breadcrumbs
- 2 tbsp extra virgin olive oil
- 2 medium potatoes
- 1 pear, thinly sliced
- 60 g rocket leaves
- 1 Lebanese cucumber, shaved
- .5 red onion, thinly sliced
- .5 cup walnuts, toasted and roughly chopped
- 1 tbsp balsamic vinegar
