Tuna Nicoise Salad

- 300 g potatoes, peeled and cut into quarters
- 200 g green beans, ends removed
- 2 free range eggs
- 1 baby cos lettuce
- 1 tomato, cut into wedges
- .25 cup kalamata olives, pitted
- 200 g tuna, in olive oil
- 2 tsp dijon mustard
- 2 tbsp red wine vinegar
- 2 tbsp extra virgin olive oil
