- 100 g rice noodles
- 400 ml tin coconut milk
- 3 tbsp laksa paste
- 1 tbsp extra virgin olive oil
- 200 g firm tofu
- 1 large carrot, sliced
- 100 g snow peas
- 1 bunch pak choy, ends removed
- 100 g bean shoots
- .25 cup coriander (cilantro), roughly chopped
- 1 lime, cut into wedges
