20 Minute Baked Eggs

- 1 tbsp extra virgin olive oil
- 1 brown onion, finely diced
- 1 red capsicum (pepper), diced
- 400 g tin diced tomatoes
- 1 cup peas, frozen
- 1 tsp cumin
- 2 tsp paprika
- 4 free range eggs
- .25 cup parsley, finely chopped
- 2 slices sourdough, toasted
