- 500 g microwavable brown rice
- 2 tbsp Portuguese chicken spice
- 500 g chicken breast, sliced
- 400 g tin of corn kernels, drained
- 1 bunch of coriander (cilantro), diced
- 1 lime, juice
- 1 avocado, cubed
- 1 tbsp extra virgin olive oil
- 1 punnet strawberries, chopped
