BBQ Chicken Tandoori
Serves 4
- 500 g chicken thigh fillets
- 1 cup plain Greek yoghurt
- 2 tbsp tandoori paste
- 1 large eggplant, slice vertically, approx ½ cm thick
- 2 red capsicum (red pepper), deseeded and chopped
- 2 bunch asparagus, tough ends (approx 1inch) removed
- 1 cup tzatziki
