Shredded Chicken Rice Noodle Salad
Serves 4
0.5 roast chicken, shredded, cooked (leave out the skin)
250 g rice noodles vermicelli
1 cup coriander/cilantro
300 g coleslaw kit (without the dressing)
250 g cherry tomatoes, halved
3 tbsp crushed peanuts like 'granulated nuts' (optional)
3 tbsp sweet chilli sauce
3 tbsp red wine vinegar
3 tbsp fish sauce
