- 2 zucchini, ends trimmed, sliced into coins
- 400 ml lite coconut milk
- 500 ml vegetable or fish stock
- 250 g frozen peas
- 400 g white fish fillet (such as pink ling, basa)
- 500 g steamed brown Rice
