- 800 g chicken thighs fillets
- 1 large sweet potato, cut into small pieces
- 3 corn cobs, halved
- 1 capsicum (red pepper)
- 3 tbsp honey
- 3 limes, 2 juiced, 1 to serve
- 2 tbsp Sriracha
- 0.25 cup extra virgin olive oil
- 1.5 avocado, to serve (optional)
- 1 cup coriander (cilantro), fresh to serve (optional)
