Healthier Fried Rice

- 1 large brown onion
- 260 g raw prawn meat or shrimp (or chicken strips)
- 500 g steamed microwave brown rice (cooked rice)
- 300 g mixed vegetables peas, corn & carrot, frozen
- 2 eggs
- 3 tbsp soy sauce (tamari for GF option)
- 2 tbsp fish sauce
- 0.25 cup crushed peanuts
