- 800 g chicken thigh fillets
- 0.25 red cabbage, finely sliced
- 2 tbsp red wine vinegar
- 2 tbsp honey (or maple syrup)
- 0.3 cup extra virgin olive oil
- 0.3 cup salt reduced soy sauce (or tamari for GF option)
- 2 tbsp ginger, grated
- 2 avocado
- 120 g baby spinach leaves
- 500 g steamed brown rice
- 2 tbsp sesame seeds to serve (optional)
