- 2 tbsp garlic infused extra virgin olive oil
- 2 brown onions
- 4 tbsp Thai Green curry paste
- 400 ml coconut milk
- 800 g creamed corn
- 800 g corn kernels
- 3 tbsp fish sauce
- 1 lime, juiced
- 1 l vegetable stock, salted reduced
- 2 carrot
- 1 capsicum (peppers), roughly chopped, seeds removed
