Veggie Loaded Chicken Satay

- 1 tbsp extra virgin olive oil
- 1 large brown onion, diced
- 2 cloves garlic, crushed
- 500 g chicken breast fillets, diced
- 2 carrots, sliced into coins
- 0.5 cauliflower, cut into small florets
- 0.5 cup smooth peanut butter (natural)
- 2 tbsp soy sauce, salt reduced
- 400 ml tin coconut milk
- 450 g brown rice (cooked)
- 100 g Pak Choy
