- 400 g Kent pumpkin, cut into large chunks
- 500 g pork sausages
- 1 red capsicum (red pepper), deseeded and cut in large chunks
- 1 red onion, cut in large chunks
- 250 g cherry tomatoes
- 2 tbsp balsamic vinegar
- 0.25 cup basil leaves
- 120 g baby spinach leaves
