One Pot Italian Pasta
Serves 6
- 500 g pasta
- 2 cup vegetable stock
- 800 g tin diced tomato
- 700 g jar passata or pasta sauce
- 260 g roasted capsicum (peppers)
- 275 g kalamata olives, pitted
- 2.5 cup baby spinach leaves
- 1 cup fresh basil leaves
- 50 g grated parmesan cheese to serve
